Chef Yevhen Klopotenko, who became nationally famous for the campaign to register borshch as a Ukrainian heritage dish with UNESCO, designs the menu — modern interpretations of pre-Soviet Ukrainian cuisine using sourced ingredients from small Ukrainian producers.
