Martin Wishart's restaurant on The Shore has held a Michelin star since 2001 and is consistently rated among Scotland's best restaurants. Wishart trained with Albert Roux and Marco Pierre White before returning to Scotland to open this room, and the cooking reflects that formation: classical French technique applied to excellent Scottish produce. The menu changes with the seasons — langoustines, hand-dived scallops, game from Scottish estates, berries from Scottish farms — with the precision and control of a kitchen that has been doing this at the highest level for over two decades. The dining room is elegant without being stiff. Essential booking.
