Habibah Sweets

Habibah is the most celebrated knafeh shop in Amman, serving the Palestinian sweet cheese pastry that is the city's signature dessert from a counter on a downtown pedestrian street. The knafeh is cut in squares to order, doused in additional sugar syrup, and eaten standing up on the pavement. A portion costs less than a dollar.

The shop has been here since 1951 and shows no sign of changing. The queue at busy times reaches the street. Come at the end of a downtown walking tour as a final reward — the sugar, cheese, and pastry combination is extremely good and extremely filling.

A story
Knafeh is made from shredded wheat (kataifi) or fine semolina layered over fresh white cheese, soaked in sugar syrup and coloured a vivid orange with food dye. The Nablus version — which Habibah claims to make — uses a particularly stretchy white cheese and is considered the original.
