Sufra is one of the best sit-down restaurants for traditional Jordanian food in Amman, occupying a converted villa on Rainbow Street with a terrace overlooking the hillside. The menu covers mansaf (the Jordanian national dish, served here in the proper way: lamb on bone in jameed yoghurt sauce over rice), makloubeh (upside-down rice layered with aubergine and meat), and a comprehensive mezze selection including dishes from the Jordanian countryside not commonly seen in restaurants.
The cooking is serious and the ingredients are good. It is more expensive than the downtown ful and falafel places but reasonable by any other standard. Book ahead on weekend evenings — it fills with Jordanian families celebrating occasions as well as travellers.
