Hobart drinks well. Tasmania is the heart of Australian single-malt whisky — Lark Distillery in the CBD started the modern industry in 1992, and several others now produce in and around the city. The local beer is Cascade, brewed continuously since 1824 at the foot of Mount Wellington, which makes Cascade Brewery the oldest brewery in Australia. For wine, there is excellent cool-climate pinot noir and sparkling from the Coal River and Derwent Valley.
