Indigenous-themed restaurant with regional fusion cooking

La Posta de los Tarabuco is a stylish small restaurant on Calle Aniceto Arce that draws on the indigenous food traditions of the Sucre region — quinoa, llama, native potatoes, freshwater fish, the medicinal herbs of the altiplano — and reinterprets them with a contemporary touch. The chef trained in Lima and the influence shows in the careful plating and the use of Andean ingredients beyond the standard tourist plates.

The dining room is small and warmly lit, with woven Tarabuco textiles hung as wall art. A tasting menu (around 200 bolivianos) runs five courses and is the best way to sample the kitchen's range; à la carte is also available. Wines from Tarija and a few interesting non-alcoholic drinks made from indigenous fruits. Reservations recommended on weekend evenings.
