One of the best-structured cooking schools in Hoi An, combining a morning visit to the market to buy ingredients with a boat ride along the Thu Bon River to the open-air school complex 4 km east of town. Classes cover four or five dishes — typically including white rose dumplings, cao lau, and a salad — with hands-on preparation and a sit-down lunch of what you've made. Half-day versions are available but the full day is more worth it. Book ahead, especially November through March.
