Cerro de la Bufa is the rough, rocky hill rising southeast of Guanajuato, close enough to the centre to make a half-day hike but high enough to feel like a real break from the callejones. The reward is the view: the city appears as a dense fold of coloured houses, church towers, and dry ravines, with the surrounding mountains giving it the bowl-like shape that explains so much of Guanajuato's street plan.
The route is not a manicured city walk. Expect sun, loose ground, and stretches where shade is scarce, and carry water even if the distance looks short on a map. Go early in the morning for cooler air and cleaner light, or late afternoon if you are comfortable descending before dark.
