Izuju has occupied the same small shopfront at the entrance to Gion since 1940, serving battera (pressed mackerel sushi) and the Kyoto-style salmon trout pressed sushi called masuzushi. Both are made fresh each morning from fish delivered from the Kyoto Wholesale Market: the mackerel is vinegar-cured overnight and pressed in a cypress wood box, then sliced to order.
Izuju is a takeaway shop as much as a restaurant -- the pressed sushi travels well and is commonly bought for picnics in Maruyama Park. The small eat-in counter fits perhaps eight diners; expect a queue on weekends.
