Three-Michelin-star kaiseki widely considered one of Japan's most rigorous traditional kitchens to book

Kichisen is one of only a handful of restaurants in Japan to hold three Michelin stars in every edition of the guide since Kyoto was first surveyed. Chef Yoshimi Tanigawa's kitchen works in what he describes as a deliberately unmodern idiom: ingredients sourced entirely from traditional producers the restaurant has supplied for decades, techniques that prioritise restraint over novelty, tableware that has been collected over a lifetime.

A meal at Kichisen is exceptionally expensive and requires an introduction from an existing guest or hotel concierge. It is included here as a benchmark, not a casual recommendation: the Kyoto kaiseki tradition has no more precise expression.
